Susumu Shimada is the owner Chef of Patissier Shima in Tokyo.
He is also a Board Member of the Academie Culinaire de France (Japanese branch) and Vice President of the Tokyo Confectionery Association, Chairman of the Club de la Galette de Rois and Member of Les Amis de Curnonsky, and Technical instructor and vice president of the Federation of Japanese Confectionery Associations.
Susumu Shimada is one of the rare Japanese craftsmen who has received the title of Chevalier of the "Ordre du Mérite Agricole".
